Goat Cheese Bruschetta with Tomato & Basil

Bright, simple, and full of flavour, this goat cheese bruschetta shines alongside a glass of our chilled Private Bin Pinot Gris for an effortlessly elegant bite.

Ingredients
1 baguette, sliced into ½-inch pieces
2-3 tbsp extra virgin olive oil
1-2 garlic cloves, peeled
2 cups cherry tomatoes, quartered
2-3 tbsp fresh basil, thinly sliced
1 small shallot, finely minced
Kosher salt & black pepper
120 g mild goat cheese, softened
Balsamic glaze, for drizzling
Method
- Grill the Bread: Brush baguette slices with olive oil and grill for 1–2 minutes each side until lightly charred. While warm, rub one side with a garlic clove.
- Make the Tomato: Topping Mix tomatoes, shallot, basil, 1 tbsp olive oil, salt, and pepper. Taste and adjust seasoning.
- Assemble: Spread goat cheese on the garlicky side of each baguette slice. Spoon on tomato mixture, drizzle with balsamic glaze, and serve.
