Citrus and Garlic Marinated Prawns

These flavour-packed citrus and garlic prawns pair perfectly with our Cellar Selection Sauvignon Blanc, a gourmet salad that requires minimal effort for maximum enjoyment.

Ingredients
500g Whole prawns or prawn cutlets (shelled)
3 Cloves garlic, finely chopped
2 Lemons
2 Oranges
1 Tbsp Olive oil
2 Baby cos lettuce
1/4 Red onion, finely sliced
1 Avocado
Handful fresh parsley, roughly chopped
Aioli
Method
- Zest and juice 1 lemon. Zest 1/2 the orange. Slice the rest of the citrus into segments.
- In a bowl, combine the prawns, chopped garlic, lemon zest, lemon juice, orange zest and olive oil. Season with salt and pepper. Cover and place in fridge to marinate for 2 hours.
- Preheat your oven to 220℃ fan bake.
- Place the prawns in a baking dish, bast with marinade, then roast for 10 minutes or until pink in colour and cooked through.
- On a plate, arrange cos lettuce leaves, red onion, orange segments and avocado.
- Lay the prawns on top of the salad, garnish with parsley or coriander.
- Serve and enjoy with a dollop of aioli and additional fresh lemon wedges.
